"Samgyupsal" every week - this is how I am pre-pandemic. Every "aya" from friends would always be "Tara, samgyup?" because why not? Who doesn't love Samgyupsal right????? Fast forward to present - its been a year after lockdown was imposed (well yeah, we're still on lockdown technically lol) One Saturday morning and I was craving for Samgyupsal.. so I thought of trying something new as I had few ingredients ready.
Ingredients:
🔸MEAT MARINATE:
🥓 250g bacon cut pork
🥓 1 tbsp gochujang
🥓 3 tbsp tomato ketchup
🥓 2 tbsp sugar
🥓 1 tbsp soy sauce
🥓 1 tbsp sesame oil
🥓 1 tbsp gochugaru / red pepper flakes
🔸KIMCHI RICE
🍚 1 tbsp cooking oil
🍚 3/4 c kimchi
🍚 3 cups rice
🍚 1 tbsp gochujang
🍚 1 tbsp soy sauce
🍳 2 Eggs
🧀 Grated Cheese (Quickmelt)
▪️ 1 tsp Sesame seeds
☘️ Lettuce or Seaweed - I used perilla leaves as it was available at the Korean Mart
1. In a bowl, add the pork belly (beef) together with the gochujang, tomato ketchup, sugar, soy sauce, sesame oil and red pepper flakes - mix together and leave for 30 minutes and fry!
2. For the Kimchi Rice - cut the kimchi into small pieces, put in a pan, add gochujang, salt and sugar. Add rice and combine together - as easy as cooking the usual fried rice
3. Beat the eggs and cook on a pan - cut into thin strips and set aside.
4. Assembly - first layer would be the kimci rice - put the eggs on top of the kimchi rice and add the grilled pork belly/beef add some gochujang and cheese om top.
5. Preheat oven and bake for 8 to 10 minutes

This recipe is as 1, 2 3 right? Feel free to add veggies to your preference. My sisters and I enjoyed it and yes samgyupsal cravings satisfied!
